I successfully completed the conversion including replacing the intake manifold. If you are doing the same and have questions, I'm happy to let you know what I did after LOTS of searching and some great board advice.
It's really pretty easy...

I just purchase a stock '79 Fiat 2000. It has the Webber 28mm/32mm ADHA carb. bolted to a 4406113 intake manifold with more vacuum lines than I have ever seen. What did you change and are you happy with the way it runs now? Thanks.

Here is a thread about a cheap Weber clone that explains the process too - I did the swap on my '79 and it works great, more power, way fewer vacuum lines!

I haven't road tested yet (working in suspension), but engine fires up and revs cleanly. Huge simplification under the hood. Electric choke eliminates the water lines plus nearly all the small emission lines are removed during the process. It's not complicated once you source the carb and 1800 intake manifold.

Generally speaking you're going to need or at least want a spacer under the 32/36. Many have found that they need to put some bends in the rod between the cable linkage and the throttle on the carburetor (including me!).
I found that the original studs in my manifold are way too tall. Ended up using a stack of washers on each. I have some shorter studs i want to try soon.
I've heard that the air cleaner housing from an 1800 can be made to mount to the 32/36 with minor modification but haven't done it yet. Instead i have one of those cheap chrome lunchbox cleaners mounted on mine.
But i brought home the air cleaner from a '73, which has the right diamond shape opening. Since the 1800's have a bigger air cleaner, at some point I'll figure out how to do this thing.

It is a good solution for the ADHA...bigger and clean. FYI all of the FIAT OEM air cleaners are too restrictive; get a foam or paper type, aftermarket one from a vendor.
