Ok - so I installed new front bearings since they were tired and the hub seal was leaking but the problem still persist - front rotors are still not centered to the caliper bracket. I've come to the conclusion that it has to be the rotors. They are off by 1/8th of an inch which is what it would take to center them.
Is everyones rotors dead centered or are they always closer to one side??
Cheers!

Re: Front brake rotor not centered
are you sure you have the correct rotors? Are the rotors in too far or out? I just got a pair of Centric rotors that weren't machined properly and the inside step was preventing the rotor from seating against the hub

I've seen that too on locally sourced rotors. However I think he got the rotors form us, and they are the same Italian made ones we've been carrying for years.
Since the problem is the same with both the old and new rotors (of course worse with the new ones as they are thicker), I would think they are not the problem.

Re: Front brake rotor not centered
Not sure if this has been solved yet.
Just did my front wheel bearings last night on the coupe.
I noticed a little metal spacer about 1/4" tall under the inner wheel bearing seal. and installed after the inner race is seated.
Is it possible that this spacer has been intalled UNDER the inner race and is the cause of the off center problem?
Never mind, just looked at the OP's pics.
Spaced the wrong way.

Re: Front brake rotor not centered
Late update:
So the rotors were indeed purchased from Auto Ricambi but I'm not sure where or who manufactured the rotors that were on the car. Measurements were identical so that lead me to believe it was something else besides the rotors. I went through the process of elimination - checked hubs, replaced bearings + races, and checked spindles. The rotors were still not centered so I ended up placing a 1/8" spacer on the backside of the rotor mount face and now the rotors are perfectly centered to the caliper.
It's a fix but something is obviously not right and the only logical part are the rotors. That being said Auto Ricambi has been selling these for years with no problems so frankly I don't know why they are off.
