Which modern day car/seat cover can replace some weathered upholstery in a 1980 Spider?

the usual Fiat vendors sell upholstery kits for the oem seats. Try IAP and World Upholstery amongst others

i was very happy with the set I got from Vick's for my 1980 spider.

just know that each kit you look at probably does not have everything you need...no bull nose rings, no bull nose pliers, no 5/32" stiffening rod...no instructions and certainly no steamer (which is a must for recovering those headrests).
