What kind of issues am I going to encounter putting a single plane 1756 intake manifold on my 79 2000? I'm upgrading to a 34 adf. I live in Portland OR and I'm needing to keep all the emissions stuff on.
Any advice?

I can't speak for Portland, but my 35 year experience in California is that, "it depends on how observant the smog test technician is." If anything appears to be altered or disconnected, the car would automatically fail smog. That would include hoses that are not connected, plugs on the manifold that aren't factory plugs, etc.
What I would do is make a list of all the connections on your original manifold and see if you can find a corresponding port on the 1800 manifold that would look original when connected. The brake booster hose is easy enough, but my recollection is that the '79 carburetted manifold is a maze of tubing and hoses. All those would have to find new "homes".
If by chance the smog check in Portland is just passing the tailpipe emissions, then your job would likely be much easier.
