I picked up an OEM shift knob for a 124, black with the 5-speed pattern on it. However, it is entirely hollow. Is there a kit out there to replace the guts of this thing so that it can be used?

I don't know about a kit, but my recollection is that the inside of the knobs is just a special "nut" that has been glued into the cavity of the knob. This nut looks like a regular nut except it's much taller, like 2 or 3 nuts stacked on top of each other. With the appropriate threads for the end of the shift lever.
Google "shift knob knut insert" and you might find something that would work. Make sure to get the right threads. Note that there are differences between the models years, and I'm assuming you have an early spider, which were the same from 1968 through 1978. Later models could be different.
