I have an off-white interior. I don't have a great picture, but here's one from when I was putting the car back together (notice the door cards are not in).

I had it done custom at an upholstery house. I wouldn't do it again. It is too hard to keep clean and I'm not sure it looks much better than the standard tan that you can get kits for.

White exterior paint but not a white interior since yes it always seems to either get dingy gray or start to yellow over time. You really have to be almost hospital clean before you sit in a car with a white interior.

I'm putting on a new top too right now. I went with autoberry.com and the German Sonnenland cloth. My current one is vinyl which is easier to keep clean, but mine isn't a daily driver so it's easy for me to keep covered. And I just don't like the look of the vinyl.

Everything with autoberry.com has gone smooth and quickly. I ordered last Saturday and it arrived Friday.

Looking forward to hearing and seeing your progress.
As I started prepping the frame: I now need a new front Bow. The corner was rusted out: no attachment for the cable.
I am probably looking more to the start of spring to finish mine up
