I changed my 79 over to the 1800 manifold and a 32 ADFA carb. I removed all of the vacuum gear. I put a thin piece of metal (4 layers of aluminum can) with high temp copper rtv on the exhaust side of the head pass through. I now have a whirring/whining sound coming from the passenger side/top end area. It was not there before the swap. It is high pitch and correlates with engine speed. Could I have not sealed the exhaust tube well enough? It seems to be coming from that general area. It is the only thing on that side of the engine that I messed with.
I can take a video if it will help.

use a stethoscope to pinpoint the noise

Whistling sound? Like possibly an air leak whistling through a small hole? or through a small gap? Given that it is high pitch and changes with engine speed. +1 on the stethoscope The stethoscope is a great idea. They cost next to nothing at HF and they help to isolate these things really well.

What is clamping the can to the port on the head? IIRC the 1800 intake doesn't reach. RTV alone won't work so if that's what you did my money is on that.
When I did mine I bit the bullet pulled the exhaust manifold, removed the nut holding the tube onto the exhaust manifold, then plugged it with proper plug. Nice and clean that way and the plug is < $10.
