Hi,
I have to replace my headgasket, 0-30lbs cyl #1, 0-30lbs cyl # 2, Do I make the jump and remove all the pollution stuff and install the dual webbers and header I have?

I would say: Depends on what you are running now.
If you have a 32ADFA, yeah, go ahead. Be aware that dual carbs are a bit of work to keep tuned up.
If you already have a decent non-emissions-compromise carburetor like a 32/36 dfev, meh, maybe not,
In either case, as long as the head is off, hand it to a professional to be checked for flatness and given a shave if needed, cleaned, new valve seals, shimmed to spec, etc.

I think the motor is stock (stock 2bbl carb), with all the pollution control on it, compression on #3 120lbs, #4 120 lbs.
Doner car with dual webbers and header, I don't know anything about cams but compression on #2 is 60 lbs
