The engine in my 1976 1800 spider is stalling when going uphill or during sudden acceleration -
Sounds like it is being starved - perhaps the fuel pump - but I do not understand the uphill scenario..
any bets on the problem ?

Stock Electric rotory fuel pump, correct? If so..
I had similar, elusive symptoms on my 75
After a long time, i finally identified an issue with sediment cloging the electric pump.
There is a mesh screen within the pump's components. It doesn't take much al all to restrict flow.
A pre-filter between pump and tank may be in order
Uphill is just where your fuel demans is larger and exceeding the available volume.
