Even without a thermometer, you can tell if you have a flow problem by feeling the radiator hoses. With the car warmed-up, do all of the big hoses feel about the same temperature?
Also wanted to ask you: When you replaced the radiator, did you make sure all the air was removed from the system? See http://www.fiatspider.com/f08/viewtopic.php?f=3&t=28599
I'm still not sure why the engine dies the moment you depress the clutch pedal, but we can deal with that later. 230°F (if accurate) is too hot.

It just occurred to me that when you push in the clutch pedal, you may be jiggling some under dash wires, creating an intermittent and causing the stalling. Take a really close look around under there. The wires directly connected to the ignition switch, and the first connector downstream are quite vulnerable to this sort of thing.

There are emission items on a '79 that might also be contributing. Isn't there a switch on the clutch pedal that does something to the carb?
