well. There aren't too many possibilities. Here are all the moving parts:

1. Actual pedal articulation. Involves a pedal, shaft and big fat spring above the pedal.

2. Clutch Cable. If anything goes wrong here, replace. order a spare.

3. Pressure Plate. Did you get a valeo or some aftermarket clutch with a high clamping pressure?

The first two, I would unscrew the 10mm nut and the other special nut on the end of the cable at the transmission side. Operate the pedal. How does it feel? if its nice and smooth, you should be good. If you feel excess resistance (other than the big fat spring) I would investigate the pedal assembly closer or replace cable.

If it does operate smoothly, then you likely have something wrong with your pressure plate.

Make sure you have a very good ground on your motor. If your ground wire is not sufficient, your car will use your clutch cable as the ground wire. This can shorten your clutch cable life significantly if you don't have a good ground. I've seen this symptom in a friend's car too. We installed a different clutch cable and it was great for about 2 months and then the clutch became stiff again.

Was the new clutch cable installed with the new clutch, or was it replaced to to try to fix this problem?

Check to make sure you have a good engine ground strap. If this ground is missing or bad, the current is carried through the clutch cable. This will damage the cable and cause high friction when the cable is under load from the actuation of the clutch. (The cable may not seem that stiff if checked while disconnected) It may not take long to damage a new cable.

Is the large helper spring present? It's toward the back of the car from the clutch pedal, by the steering column.
