Do I put on any sealant or other goop when installing new intake plenum gasket? Any other stuff to look for while I'm there?

I don't, but I make sure I've got a pretty good gasket there. I'm sure others will disagree though.... and mention something about thermal expansion of components

No sealer needed. Stay away from silicones, they rot when exposed to fuel or fumes.
