I am in the process of swapping out my 79 carb, and have the old intake off (yeah!) cleaning up the underside, replacing crank case vent hoses and cleaning out the cylone, but I have mild oil seepage from the head gasket towards the firewall - so plan to re-torque the head (engine was rebuilt 20K miles about/20 years ago) = what is the correct torque and is there a pattern I should follow? will do this last - after the new intake/carb is in but before I fire her up - let me know please

Correct torque is 61 ft-lb. You will have to loosen each bolt a bit before torquing them (one at a time). Not sure how much, maybe 1/8 turn? The pattern is (from memory, the important thing is to go from the center toward the outside):
