I had the same problem in my 79 Spider. Replaced the temperature sender and thermostat and the problem was fixed.

I replaced my radiator, thermostat, water pump, and hoses and in the end it turned out to be the front temperature sensor went bad. In all honesty, I needed to replace all of that anyway so it wasn't a big deal. Just earlier than I had planned.

For some reason when the front one goes bad, it causes the temp gauge to go all the way hot. So if everything seems normal on your car and you don't have the feeling its cooking over, then try disconnecting the front temp sensor. If the temp goes back to normal, then replace the sensor. If it still is hot after disconnecting the sensor, then you need to replace something else.
