Coming together well, but now I'm in the phase of figuring out which bolts were supposed to go where. What are the size stats for both the intake and exhaust manifold bolts? I'll probably just pick up some new ones at the bolt supply shop. What size, thread and length?

Looks super! The intake and exhaust manifold studs and bolts are 8x1.25mm. I don't know the lengths, I think the exhaust studs are 45mm, except the center one which is longer as the water pipe is attached to it.
