I ended up doubling the EZ Cool over the Cat Con, and adding secondary closed cell dense foam padding under the drivers side:

I found the secondary padding at a local craft supply store, "Michaels" here in MA. A 36 x 60 roll was only 5 bucks. It is a little thin, so I adhered 2 layers together and gained 3/16 thickness: Works great, and very inexpensive!

New inner boot seal and top foam installed:

And back together with new carpets and seats it all finally went, transformed from stock tan/beige interior to my preference: grey and black cuisine with genuine imitation authentic faux leather.

I can say that the dyeing approach is great and very cost effective, but it is not durable. Getting these consoles back in without scratching them or causing other damage seems near impossible. I now have some "spray in place" touchup work left to do. But overall I am happy with the results. Am also ordering some coco mats and will be ready to roll as soon as the weather obliges!
I can taste the scallop plate at the Lobster Hut in Plymouth already!
