Hi,

Can anyne tell the height of the standard front and rear springs for a 1981 Spider ? ( in millimeters or inches )

This is uncompressed height.

Front: 14.5"
Rear: 18.75"

FYI the spring height changed post-74 to raise the height of the Spider to meet the US regulations. If you end up removing the bumpers you might find your car looks like it's on stilts. Fortunately there are plenty of aftermarket springs available (sold in Aus for the 124 Coupe).
